My Favorite Raw Carrot Salad
If I could go back and tell my teenage self something, I’d tell her, “Eat some carrots, girl!”
I’ve been eating a raw carrot or raw carrot salad every day (well, let’s be real - almost every day” for the past year and it’s been one of the best things I’ve done for my health. How could a raw carrot be so powerful?! I’m glad you asked. ;)
Dr. Ray Peat found that raw carrots help the liver by binding to toxins and used estrogen in the digestive tract and carrying all that yucky stuff out of the body. #givemeallthecarrots
The fiber in raw carrots can also help promote more regular bowel movements! Poop is how used hormones and toxins leave the body after the liver has processed them and broken them down, so staying regular is key for a happier liver and happier hormones.
If you and carrots don’t do well together, you can try really well cooked (boiled) mushrooms or bamboo shoots.
And now for my favorite carrot salad recipe…
2 medium-large carrots, peeled and then ribboned (I peel off the outer layer and throw it away and then use the peeler to “ribbon” the carrots)

roughly 1 Tbsp. seasoned rice vinegar (not just regular rice vinegar)
sprinkle of black pepper
fun & delicious optional add-ons: feta and/or pickled red onion
